Chole Recipe

Ingredients:

  1. Dried Chickpea – 250 grams
  2. Onion – 4 medium size
  3. Green chilies – 4
  4. Tomatoes – 4 medium size
  5. Ginger garlic paste – 1 tbsp
  6. Cardamom, clove, bay leave, cinnamon, Mace – 1 each
  7. Back stone flower, Shahi jeera – a pinch each.
  8. Oil – 3 tbsp
  9. Salt – to taste
  10. Red chili powder – 4 tbsp
  11. Turmeric powder – 1 tsp
  12. Garam masala – a small pinch
  13. Coriander leaves – handful
  14. Mint leaves – handful

Preparation:

  1. Soak the dried chickpea overnight. Cook them in the pressure cooker per your requirement – I have cooked them for 3 whistles on high flame and 10 minutes on simmer after that. I have added 3 cups of water to 250 grams of soaked chickpea and used the excess water for gravy. Turn off the heat and set them aside.
  2. Finely chop the onions and slit the green chilies. Roughly slice the tomatoes and grind them to puree.
  3. In a pan, add oil and all spices. Cook till the spices turn aromatic. Add finely chopped onions, slit green chilies. Cook till they turn golden brown.
  4. Add ginger garlic paste and cook for couple of minutes. Add the tomato puree and cook for 10 minutes on medium heat.
  5. Add the cooked chickpea to the mix and give it a good stir. If you have used excess water drain some water.
  6. Add salt, red chili powder, turmeric powder and garam masala to the mix and stir until all ingredients are mixed properly. Cook for 10 minutes on simmer. Add finely chopped coriander and mint leaves. Chole is ready to be serve with Roti/Puri etc.,
